Chef De Cuisine
We are looking for a Chef de Cuisine to lead and inspire our kitchen staff in the creation of culinary masterpieces. The chef de cuisine will be responsible for designing the menu, hiring and training kitchen staff, collaborating with restaurant management, optimizing staff productivity, and stepping in to help wherever needed.
Responsibilities:
- Ensuring that all food meets the highest quality standards and is served on time;
- Compose all menus and presentations for your outlet;
- Based upon menu item sales figures, review the profitability and popularity of dishes upon the menu and make changes where applicable (this function is to be carried out in conjunction with the Executive Chef);
- Hiring and training staff to prepare and cook all the menu items;
- Stocktaking ingredients and equipment, and placing orders as needed;
- Enforcing best practices for safety and sanitation in the kitchen;
- Creating new recipes to regularly update the menu;
- Control of food purchasing levels in liaison with the stores person;
- Ensure the highest standards of personal presentation, hygiene and conduct in accordance with the hotel standards;
- To organize and supervise the training of kitchen staff, motivating all staff to increase skills in food preparation and kitchen management;
- Ensure all training given is accurately recorded and that all staff are reviewed and appraised within the necessary time frames as required by the Human Resources Department;
- Ensure that all HACCP guidelines are achieved and maintained;
Requirements (Key Skills)
- Qualification from a culinary school;
- 5+ years of experience in a similar position;
- In-depth knowledge of food principles and best practices;
- Passion for creating incredible food that delights and attracts customers;
- Excellent communication skills and leadership qualities;
- Ability to thrive in a high-pressure environment;
- Creative, innovative thinking;
- Exceptional standards for cleanliness, health, and safety;
- Experience managing inventories and stocktaking;
- Available to work on-call, shifts, after hours, over weekends, and on holidays;
- Teamwork; Adaptability; Customer Focus; Drive for Results;
- Excellent computer skills;
- Fluency in English language, other languages are considered a plus;
